Wales might be closed to visitors at the moment but that doesn’t mean you have to miss out on a taste of Wales!
Michelle Fecci-Evans from the Great British Bake off visited the Cargo Cabin earlier on in the year. This week, Michelle has been kind enough to share her Welsh cake recipe with us, perfect for a bit of lockdown baking!
Welsh cakes have been a firm favourite for generations in our family and Michelle’s recipe transforms basic store cupboard ingredients into something very special.
You will need…
280g self raising flour
115g unsalted butter
115g caster sugar
1tsp baking powder
200g currants
1 large egg beaten
2-3tbsp milk
1tsp ground mixed spice
Pinch of salt
(The 200g grams of currants can be replaced with anything from chocolate chips to candied blueberries!)
Method
Rub flour and butter together to fine breadcrumbs. Add sugar, baking powder, spice and salt.
Add egg and the milk a little bit at a time. Mix together thoroughly. Add fruit and mix well.
Roll out dough to 1cm thick, and stamp out rounds with circle cutter.
Cook for a minute each side until golden brown.
